Family Style Ramadan Iftar Menu

A warm and hearty Iftar menu for long family conversations. Recipes for Restaurant-style Lentil Soup, One-Tray Kofta and Potatoes, and classic Semolina Halva.
 
 
Red Lentil Soup (Restaurant Consistency)
 
Method: Sauté diced onion, potato, and carrot in butter. Add washed red lentils and 6 cups of water. Simmer for 25 mins. Blend until silky smooth. Serve with sizzling butter and chili flakes.
 
 
One-Tray Kofta & Potatoes (Family Favorite)
 
Method: Knead 500g ground beef with grated onion, 1 egg, and breadcrumbs. Shape into oval patties. Arrange on a tray with potato wedges, tomatoes, and peppers. Pour a tomato paste and olive oil sauce over. Bake at 200°C for 40 mins.
 
 
Semolina Halva (The Conversation Dessert)
 
Method: Roast 1 cup of semolina in butter until golden brown (approx. 10 mins). Pour a mixture of 1.5 cups milk and 1 cup sugar over the roasted grains. Cover and let it rest for 5 mins. Perfect with tea!
