Quick Ramadan Iftar Menu for Working Moms
A practical and delicious 40-minute Iftar menu. Quick lentil soup, one-tray roasted chicken and potatoes, and 10-minute milk pudding recipes.
 
 
Quick Red Lentil Soup (Smooth Texture)
 
Method: Sauté diced onion, potato, and carrot in butter and oil. Add washed lentils and 6 cups of hot water. Simmer for 20 mins. Blend until smooth. Top with butter-sizzled red pepper flakes.
 
 
One-Tray Roasted Chicken & Potatoes
 
Method: Toss chicken thighs and sliced potatoes in a mix of olive oil, tomato paste, garlic, and thyme. Spread on a baking sheet and bake at 200°C for 35–40 mins. High protein, zero stress!
 
 
0-Minute Milk Pudding (Muhallebi)
 
Method: Whisk 1 liter of milk, 3 tbsp flour, and 3 tbsp sugar in a pot. Cook until thickened. Stir in 1 tbsp butter at the end. Pour into bowls and garnish with cinnamon.
